The start of another week and time is flying by. I'm enjoying a few days off, making the most of the warm Spring sunshine plus a tad of op-shopping thrown in for good measure.
The garden is really showing off at the moment too.
the vivid pinks of the yet-to-be-determined-fruit trees out the front are blossoming
contrasting perfectly with the blues and greens of the bunting
tiny baby strawberries still a way off yet
weathered old buildings make for a lovely walk
and a large thrifted milkglass vase to add to the almost full mantel

It's bunting overload in my Creative Space this week. I still don't tire of it- the combination of worn vintage sheets. the colours. the mix of stripes and it makes me smile whenever I see it.

Simple paper crafting.

There's nothing like three days off in a row to get some crafting happening.
Something simple and easy with very quick results was on the cards...

with a thrifted 20c book that had seen better days

plus some shipping tags
I got to work cutting and sticking

Next in the creative space department is more bunting, baby bibs and maybe a dress for the already warmer Spring weather- all of which I hope to make a start on before the 5am alarm come Sunday morning.

Pinterest inspired baking.

No-bake energy bites

I adapted it somewhat to the ingredients I had on hand and they turned out oh so yummy. The perfect alternative to all those expensive, weird ingredient-filled and over packaged store-bought muesli bars that seem to make their way into the shopping trolley.
Plus they take all of 5 minutes to make and not much longer to eat if you're not careful.

So here goes.. my version of No-bake Energy Bites

Makes approx. 24.

1 cup rolled oats
2/3 cup coconut, toasted if you like
1/2 cup chopped dates
1/2 cup chia seeds
1/2- 3/4 cup peanut butter
1/3 cup honey

Zap peanut butter in the microwave for a few seconds to soften. Stir in honey then add to dry ingredients and mix well adding more honey/peanut butter if too dry. Wet hands and roll into balls about the size of a walnut.
Place in the fridge.
Will keep for a week.

Now if you don't have these exact ingredients in the pantry you can adapt it to what you do. As long as you keep the wet to dry ingredient ratio the same they should come out alright.
Variations to try next time are chopped dried apricots or apple, sultanas, choc chips, nuts or sunflower seeds.
